We were introduced to Jorge Rojas’ washed Chiroso when our friends Nikolai and Manuela of Desarrolladores came to visit our shop with a bag full of samples from all their friends in Colombia. Jorge’s chiroso immediately stuck out on the table as a remarkably “ethiopian tasting” coffee. The lemony acidity, tropical juiciness, and delicate florality was too good to pass up.
